Christmas Dinner Recipe: Cranberry and Plum Sauce – Every Christmas dinner deserves the sharp tangy flavour of fresh cranberry sauce, made that little bit special with the addition of some plums and a dash of port. To create the perfect accompaniment follow the recipe below. Ingredients * 250g cranberries (fresh) * 340g plums in syrup * 2 oranges (zested and juiced) * 1 cinnamon stick * 1 tsp all spice powder * 2 tbsp caster sugar * Generous splash of port Method 1. Combine all of the above and simmer for 1 hour until thick and sticky — add more port if required. You could add more sugar as well if you find this too tart but we are not trying to make cranberry jam here; the tartness works well against the richness of the turkey and ham. 2. Remember to watch over the sauce as it cooks, stirring every so often, so that it doesn’t stick. 3. When sauce is ready take off heat and allow to cool before transferring to a serving dish.
